Cheese Souffle

Ingredients 3 tablespoons butter.
4 tablespoons flour.
½ teaspoon salt.
1 cup milk.
¾ cup grated cheese.
1/8 teaspoon mustard.
Few grains cayenne.
3 egg yolks.
3 egg whites.
Instructions Make a regular cream sauce from the butter, flour, milk and seasonings. Add the cheese and stir until melted. Re­move from heat; stir in unbeaten egg yolks. Fold in the stiffly beaten egg whites. Pour the mixture into a but­tered baking dish. Bake in a moderate oven 350 degrees F. for 40 minutes or until the mixture does not adhere to the tip of a knife gently inserted in the centre. Serve at once.
Now, generally speaking, a mixture such as this is cooked by placing it in a pan of water but I have found that I get a drier, firmer souffle by baking it at 350 degrees F. without the pan of water in the oven.
