Pineapple Upside-Down Cake

Ingredients |
3 tablespoons butter 1/2 cup brown sugar 5 or 6 slices canned pineapple 5 or 6 maraschino cherries 2 1/2 tablespoons butter 1/2 cup fine sugar 1 egg 1/4 teaspoon flavoring 1 cup flour 1 1/4 teaspoons baking powder 1/4 teaspoon salt 1/4 cup milk |
Instructions | Place butter in round cake pan and melt. Sprinkle on the sugar. Now place in slices of pineapple with a cherry in the middle of each one. Cream butter very well. Add sugar gradually and cream in well. Add the well-beaten egg and beat very thoroughly. Add flavoring. Mix and sift the dry ingredients and add alternately with the milk. Pour over the fruit arranged in pan. Bake at 350 degrees F for about 35 minutes. Loosen cake from sides of pan. Invert on large serving plate and serve either with or without whipped cream. |
