Tomato Cheese Souffle

Ingredients |
3 tablespoons butter. 4 tablespoons flour. ¾ teaspoon salt. ¼ teaspoon sugar. Few grains cayenne pepper. 1 cup tomato juice. ¾ cup grated cheese. 3 egg yolks . 3 egg whites. |
Instructions | Melt butter and blend in flour and seasonings. Add tomato juice and cook until thick. Add cheese and heat until melted. Add the slightly beaten egg yolks. Now fold in the stiffly beaten whites. Pour into a buttered baking dish. Bake in a moderate oven at 350 degrees F. for 40 to 45 minutes. Serve at once. |
