Baked Fish

Ingredients 1 4lb fish
Instructions Clean about a 4-pound fish. Sprinkle lightly with salt, inside and out. Stuff and sew up. (For dry fish such as had­dock and cod, make a few gashes and insert narrow strips of fat, salt pork.) Now, using a long skewer, shape the fish into the shape of a letter "S." Place in a greased baking pan. Brush over with melted fat or oil. Bake at 425 degrees F. for 1 hour, basting about every 10 minutes with fat in pan
